Method

In a tagine pot or large frypan, heat the oil and sauté (fry quickly) the onions and garlic and spices for 5 minutes.

Add the other ingredients.

Place the lid on the pot and put into the oven for 1 1/2 hours or until tender. (If using a frying pan transfer to a casserole dish).

Season with salt and pepper and serve over rice or couscous.
