Method

Heat the oil in a large pan and fry the onion and garlic for 2 minutes.

Add the mushrooms and fry for another 5 minutes.

Add the beans, capsicum and spice mix and stir through.

Add the can of tomatoes, stir and simmer for 10-15 minutes.

Spread corn chips on a plate and spoon the beans over top.

Serve with guacamole, salsa and/or dairy-free cheese.
