Method

Preheat oven to 180°C. Line a baking tray with baking paper.

In a large bowl, whisk together oats, flour, coconut, cinnamon, baking powder, baking soda and salt.

In a medium bowl, whisk together oil, peanut butter, sugar and vanilla. Whisk until smooth. Add banana and mix further.

Combine both mixtures. Fold the ingredients together until well combined. Add chocolate chips and nuts.

Pour dough into the prepared baking pan. Spread into an even and tightly packed layer.

Bake for 20-30 minutes or until golden brown

Cool and slice into 16 bars. Keep in an airtight container.
