Nachos

Ingredients

1 can of black beans (or Kidney beans)

1 can of tomatoes

1 onion

2 cloves of garlic, minced

1 capsicum diced

3-4 mushrooms (optional)

packet of corn chips

 

 

Ingredients for Spice mix

1 tsp smoked paprika

1 tsp dried oregano

1 tsp onion powder

½ tsp ground cumin

½ tsp ground coriander

For spice, add ¼-½ tsp cayenne pepper.

Method

Drain the can of beans.

Chop the vegetables.

Fry the onion and garlic for 2 minutes.

Add the mushrooms and fry for another 5 minutes.

Add the beans, capsicum and spice mix and stir through.

Add the can of tomatoes, stir and simmer for 10-15 minutes.

Spread corn chips on a plate and spoon the veggie and bean mix over.

 

You might like to add some guacamole or vegan cheese for more excitement!
